Baldo Vino Restaurant was founded in Pistoia in 1998. Over time, BaldoVino wine bar has established itself as an elegant gourmet restaurant and has carved out a name for itself in Tuscan fine dining. This is thanks in part to a cellar with over 3,000 wines reflecting research and passion, and a unique selection of fine wines and champagnes, making it the ideal place to uncork something special and often rare. Since May 2026, the kitchen has been entrusted to Chef Marco Cahssai.
Bibendum is Baldo Vino's wine bar and bistro. As you enter the historic building, restored to preserve the splendor and wonder of its past, to your left is the bistro and wine bar, open from lunch until evening. Here, in an elegant, light, and relaxed atmosphere, you can savor simple yet hearty dishes made with excellent ingredients, paired with wine and cocktails.
